I shared this recipe a while back when I first started blogging. But I’m revisiting it now for a couple of reasons. Ingredients for Chilli Cheese Corn Toast
- 1 cup boiled corn kernels
- 1/2 cup grated cheese (you can use a mix of cheddar and mozzarella)
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped capsicum
- 1/4 cup finely chopped tomatoes
- 1-2 finely chopped green chilies (optional)
- 2 tablespoons chopped coriander leaves
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- Salt to taste
- 4-6 slices of bread
- Butter for toasting
Here’s How to Make it
In a bowl, combine the boiled corn kernels, grated cheese, finely chopped onions, capsicum, tomatoes, green chilies (if using), coriander leaves, red chili powder, cumin powder, and salt. Mix everything well.
Take a slice of bread and spread some butter on one side. Place a generous amount of the corn and cheese mixture on the non-buttered side of the bread.
Heat a non-stick pan or a tawa over medium heat. Place the bread slice, buttered side down, on the pan.
Cook the toast on medium heat until the bottom side is crispy and golden brown, and the cheese has melted. You can cover the pan with a lid to help the cheese melt faster.
