I first tried crispy corn at BBQ Nation and fell in love with it. So, I decided to recreate it at home. While I’m not sure of the exact ingredients they use, this recipe came pretty close to the one I tasted. Give it a try and watch as both kids and adults at home ask for more!

Making this dish is actually quite easy, but there’s one important tip to keep in mind when frying the corn kernels. After boiling the corn, coat them generously in a mixture of corn flour and all-purpose flour (some people also use rice flour). Then, carefully deep fry the coated corn kernels. Be sure to be cautious during this step, as the kernels tend to pop and might even jump out of the pan. To prevent any mishaps, immediately cover the pan after adding the kernels to the hot oil on medium-high heat.

Ingredients for Crispy Fried Corn

  • Sweet Corn – 1 cup
  • Corn flour – 2 tbsp
  • Salt – ½ tsp
  • Red chilli powder – ½ tsp
  • Oil – for frying

To serve

  • Green chilli – 2 (finely chopped)
  • Green Coriander – 1 tablespoon (finely chopped)
  • Lemon – ½

How to make Crispy Fried Corn

Boil sweet corn

Put 2 cups of water in a vessel, cover it and let the water boil. When the water boils, add sweet corn to it and let it boil for 5 to 6 minutes.

After 5 minutes, the sweet corn will start looking puffed up. Sweet corn has been boiled. Take them out of the water, put them in a sieve and then turn them into a bowl.

Add corn flour, red chilli powder and salt to sweet corn. Mix everything well until the spices stick well to the sweet corn. The spices should not look like powder.

Put oil in the pan and heat it. Take your hand over the pan and check whether the oil is hot or not. There should be warmth on the hand. There is no need for very hot oil to fry sweet corn. You can also check the oil by adding 1 sweet corn.

Slowly add half the sweet corn in low heat oil and stir it a little with a ladle. Fry the sweet corn on low medium flame for 3 minutes. After this, increase the flame and fry them for 1 to 2 more minutes.

After 2 minutes, the sweet corn crisps are ready after frying. Take them out in a strainer over the pan so that the excess oil goes back into the pan. Lower the flame and keep the sweet corn in a plate.

Fry the remaining sweet corn in the same manner. One serving of sweet corn gets fried in 5 minutes. If you want, you can also eat sweet corn like this. To make them more delicious, add spices like green chillies, green coriander and squeeze of lemon. Mix all the ingredients and crispy sweet corn is ready.

Sweet corn will appear puffy when boiled.

While adding spices to sweet corn, if they are not sticking well to the sweet corn, then add 1 or ½ teaspoon water to it and mix well.

Do not put sweet corn in hot oil for frying and the flame should also be low at first. If you fry them in very hot oil, they will burst and fall out of the pan. If this happens by mistake, cover the pan with a plate so that the sweet corn that rises up hits the plate and goes back into the pan.

You can increase or decrease the spices as per your taste. If you want, you can add red chili powder, black pepper powder, dry mango powder, cumin powder or chaat masala over it. If you are using chaat masala in it, then do not add salt first or add less.
